Birria Tacos Are Still the Internet’s Favorite Taco β€” Make Quesabirria at Home

October 21, 2026 Β· admin

Some food trends fade in a season. Birria is not one of them. Search data for October 2026 shows birria taco recipes still climbing β€” roughly 165,000 searches and up about 50% on last year β€” as home cooks keep chasing the Jalisco-style braise: beef simmered low and slow in a dried-chile broth until it falls apart, then tucked into tortillas that are dipped in the broth’s red fat and crisped on a hot griddle with cheese.

What you need

  • 3 lb beef chuck roast, cut into large chunks
  • 5 dried guajillo chiles and 2 dried ancho chiles, stems and seeds removed
  • 1 onion, quartered, plus 1/2 onion finely diced for serving
  • 5 garlic cloves
  • 2 bay leaves, 1 tsp cumin, 1 tsp dried oregano, 1/2 tsp ground cinnamon
  • 4 cups beef stock, 2 tbsp apple cider vinegar, salt and pepper
  • 12 corn tortillas and 2 cups shredded Oaxaca or mozzarella cheese
  • Chopped cilantro and lime wedges, to serve

How to make it

  1. Toast the dried chiles in a dry pan for about 30 seconds per side, then soak in hot water for 20 minutes until soft.
  2. Blend the chiles with the quartered onion, garlic, spices, vinegar and a cup of stock until completely smooth.
  3. Season the beef with salt and pepper, sear in a heavy pot until browned, then pour over the chile sauce and remaining stock. Add the bay leaves.
  4. Cover and braise on low for 3 to 3 1/2 hours (or 8 hours in a slow cooker) until the meat shreds easily. Lift out the beef, shred it, and skim the red fat from the surface of the broth into a small bowl.
  5. Dip each tortilla into the skimmed fat, lay it on a hot griddle, add cheese and shredded beef to one half, and fold. Crisp 1 to 2 minutes per side until deeply red and crunchy.
  6. Serve with warm consommΓ© for dipping, topped with diced onion, cilantro and a squeeze of lime.

The hands-on work is modest; the braise does the heavy lifting. Make a double batch β€” the leftover beef and broth reheat beautifully for a second taco night.
